Homemade Ice Cream - Simple Strawberry

As a child growing up in a rural village one of the pleasures of the summer was picking strawberries. When June arrived I, along with all the other children, waited excitedly for the giant signs to go up in the farmer's fields advertising that pick your own strawberry season was here again. As soon as the signs went up, mums and dads were nagged and nagged until we were eventually allowed to go, and the fields were soon filled with families carrying assorted boxes, cartons and baskets which were soon filled with luscious, plump, scarlet strawberries.

When I moved to France one of the first things I planted in my vegetable garden was two rows of strawberry plants. I felt like a child again, waiting for the plants to grow and provide me with a bumper crop of fruit. What I didn't anticipate was how many strawberries two rows of plants provide and I was soon overwhelmed with mountains, well small mountains if I am to be totally truthful, but still far too many for me to eat.

The problem with strawberries, the only problem that I can see as I absolutely love them, is that they arrive at the hottest time of the year. I love making jam, and make quite a lot of it, but the thought of spending hours in the kitchen making jam during the hottest weeks of the year filled me with dread. Fortunately strawberries make fantastic ice cream and so turning to my trusty Ice Cream Maker I set about making strawberry ice cream in the simplest and quickest way I could possibly think of.

Below is my homemade ice cream recipe for strawberry ice cream. It is very simple and easy to make, and tastes delicious especially on a hot summers evening with a chilled glass of local french wine.

Homemade Strawberry Ice Cream

450g Strawberries

75g Sugar

450g Double Cream

50ml Water

First of all hull and chop your strawberries in to small pieces, I tend to chop larger strawberries in to six and smaller strawberries in to four. Place to one side.

Place the sugar and the water in to a pan to make a sugar syrup. Heat until the sugar has dissolved and then simmer for a few minutes. Pour the syrup and th strawberries in to a food processor and blend until you have a puree.

Add the puree to the cream and churn in your Ice Cream Maker.

3 Easy Strawberry Ice Cream Recipes

If you are in the mood to make ice cream with your ice cream maker, these three easy strawberry ice cream recipes can make a nice summer treat. Each are different, so you have options depending on the ingredients you have at home.

Recipe #1 - NON-DAIRY STRAWBERRY

2 teaspoons kosher gelatin

1/4 cup apple-strawberry juice

2/3 cup all-fruit strawberry jam

3 cups vanilla soy milk

1 teaspoon vanilla

1. In a small bowl, sprinkle gelatin over apple juice. Let sit, stirring occasionally, until gelatin is dissolved and softened, about 10 minutes.

2. In a medium saucepan, whisk together jam and 2 cups soy milk. Cook until just hot, stirring frequently; remove from heat. Add softened gelatin to hot milk mixture, stirring until gelatin is completely dissolved. Stir in remaining soy milk and vanilla; let cool, cover, and refrigerate until very well-chilled.

3. Spoon chilled mixture into the canister of an ice cream maker and freeze according to manufacturer's directions.

Makes about 1 quart.

Recipe #2 - OLD-FASHIONED STRAWBERRY

1 pt Strawberries

1 c Sugar

1 Egg

1 c Half and half

1 t Vanilla

3 c Heavy cream

Hull the berries and cut the larger ones in half. Place the berries in a double boiler and add 1/2 cup sugar. Heat for 10-15 minutes, stirring occasionally, until the fruit is very soft. Puree the fruit in a blender. Transfer puree to a bowl and cool in the refrigerator.

Put the egg, half and half, remaining sugar and vanilla extract in the blender and blend on medium speed till mixture is smooth and the sugar is dissolved. Slowly add the cream and continue blending on low speed for 30 seconds. Transfer the mixture to your ice cream freezer and freeze according to manufacturer's instructions.

When the ice cream is about half frozen, add the strawberry puree to the mixture. Continue freezing. Makes slightly more than 1 quart.

Recipe #3 - STRAWBERRY SORBET

You might make extra purée and use it as a sauce under the sorbet. A fresh mint spring makes a pretty garnish.

2 pints strawberries, washed and hulled

1 cup plus 2 tablespoons superfine sugar

1/4 cup fresh lemon juice

Purée the strawberries in a food processor. You should have about 3 cups. Stir in 1 cup of the simple syrup and the lemon juice. Taste and add remaining syrup if necessary. Pour the mixture into the bowl of the machine and freeze.

Peel Cavendish Bananas (ripe) then cut it into small slices and freeze it in one or two hours. Remove the sliced Bananas and transfer it to the blender. Blend the fruit until you get the consistency of an ice cream. Sprinkle in some of your favorite nuts and dried fruits to enrich the flavor. You can try this recipe with fruits like Mango or Lychee.

Low Fat Pineapple Ice Cream

In this recipe, you will need, one half cup of Pineapple (crushed), two tablespoon of non-fat dry milk, 4 packets of low calorie sweetener, 12 ice cubes, one chunk of Pineapple, one slice of Banana (according to your choice) and one piece of Maraschino cherry. Combine all ingredients in a blender. Blend it until you achieve the desirable consistency. You can also make it pulpy (bits and pulp of fruit ingredients) emphasizing the flavor of each fruit. Freeze it for thirty to forty five minutes, garnish and serve.

Traditional Homemade Ice Cream

You will need one half cup of skimmed milk, 3 teaspoons of honey (instead of using sugar), one fourth vanilla extract (you can choose other flavors), fifteen pieces of ice cubes (crushed), and a pint of salt. Mix together the skimmed milk, honey and vanilla extract, add the pint of salt, and mix it well with the crushed ice cubes. To make your traditional homemade ice cream, mix it with nuts (almonds, pistachios, and walnuts), berries or granola if you want. Freeze for thirty minutes to one hour. Share it with friends and enjoy.

Low fat ice creams can be enjoyed by anyone. Instead of using sugar, a good alternative to it is honey or you can use the maple syrup.
